The CAN ULC-S646-2010 (R2016) standard provides requirements for exhaust hoods used in commercial and institutional kitchens. The standard covers various types of exhaust hoods, including shelf, canopy, island, double island, and equipment mounted styles. These hoods are designed to be placed over restaurant-type cooking equipment such as ranges, broilers, deep fat fryers, and grills during normal cooking operations. The hoods may include provisions for introducing make-up air into the kitchen and limiting exhaust temperatures to 190 °C.

The standard specifies that the exhaust hoods should be installed in accordance with ULC-S650, which is the standard for the installation and performance of ventilation and fire suppression systems for commercial and institutional cooking equipment. The hoods are suitable for use with electric, gaseous-fuel, or solid-fuel burning appliances rated not over 600 V and installed under the requirements of CAN/CSA-C22.1, which is the Canadian Electrical Code, Part I. However, it's important to note that the standard does not cover fire-extinguishing systems.
